Ingredients
Cake:
- 2 cups almond flour
- 1 ½ cups date paste (we’ve shared the recipe here)
- 1 ½ teaspoons baking powder
- 1 teaspoon cinnamon
- 1 teaspoon salt
- ½ teaspoon baking soda
- 1 cup unsalted butter, at room temperature
- 1 cup heavy cream
- Juice of ½ lemon
- 1 teaspoon vanilla paste
- 3 large eggs
- About 10 pitted dates, chopped
Syrup:
- ¾ cup date paste
- 1 teaspoon vanilla paste
- ¾ cup fresh heavy cream
Instructions
- Warm up the energy of the oven – Preheat to 180°C (350°F) and grease a cake pan with butter and a bit of oat flour, or use parchment paper.
- Prepare the sacred base – In a mixer, combine the date paste, baking powder, cinnamon, salt, baking soda, and almond flour at low speed until well integrated.
- Incorporate the essence of the earth – Add the butter (at room temperature) and beat until the texture resembles wet sand.
- Bring lightness to the mixture – Add the heavy cream, lemon juice, and vanilla. Continue beating until the batter thickens, for about 1 minute.
- The strength of the eggs – Add the eggs, one at a time, beating for 30 seconds between each addition.
- The sweetness of the gift – Mix in the chopped dates and beat for another 30 seconds.
- Transformation in the oven – Transfer the batter to the pan and bake until a toothpick inserted in the center comes out clean. Baking time varies between 40 and 50 minutes, depending on your oven.
- The time of patience – Let the cake cool in the pan before unmolding, as it is delicate. Meanwhile, prepare the syrup by simply mixing all the ingredients in a small bowl.
- The golden crowning – Once cooled, unmold the cake and cover it with the date paste syrup.
